<p>據美國CNBC報導指出,2000年是美國麵包消耗量最高峰,自此之後就節節下滑,從2015~2020年間的麵包銷售就幾乎沒有再成長,甚至在2017顯示美國人花費更少的錢購買麵包。當然透過生產線所製造出來的大量麵包一直存在一些問題,如麵粉改良劑、添加糖、防腐劑或基因改造小麥等問題。這些改良或添加都是為了能夠在短時間內,生產出大量質地柔軟且耐放的麵包。 </p> <p>不過吃酸種麵包新文化,在2017年開始出現成長,更有資料顯示在2019年餐廳裡提供酸種麵包比例自2009年的11.6% 成長到了14.3%。社群媒體自然是推升酸種麵包重要平台,特別是自己在家發酵,製作酸種麵包成了一件很酷的休閒活動,有點像曾經瘋迷一時的自製康普茶。研究指出在美國有88% 知道什麼是酸種麵包,大約又有73% 的人吃過它,因此比起生產線麵包銷量的消退,酸種麵包卻帶來麵包的新商機。光在美國:『酸種麵包就從2014年的2.9億美元,一路成長到2018年的24億美元』。</p>
