今回のテーマは『ジビエ』。「ジビエ」とは、フランス語で、狩りの対象となる野生の鳥や獣（けもの）、またはその肉のこと。日本でも野生動物による農業や林業への被害が広がる中、しっかりとしたルールや衛生管理のもとで、捕獲した動物を「ジビエ」として有効活用しようという取り組みが広がっています。特に北海道は、ジビエの利用量が日本一！道内のレストランや飲食店でも、北海道ならではの食材として提供するお店が増えています。今回も、 狩猟免許を持ち、野生鳥獣の研究をしている酪農学園大学 准教授 伊吾田宏正（いごた・ひろまさ）さんに北海道の「ジビエ」 について伺います。

今回のテーマは『チャンチャン焼き』。サケなどの魚と野菜を蒸し焼きにして、味噌ダレで味付けした日本の郷土料理 「チャンチャン焼き」。農林水産省が主催する「農山漁村の郷土料理百選」では、北海道の郷土料理として、石狩鍋、ジンギスカンとともに選ばれています。「鮭のチャンチャン焼き」は石狩地方の漁師町が発祥と言われ、船の上で漁師たちが、ドラム缶から作った鉄板でサケを焼いて食べたという豪快なエピソードも伝わっています。一般家庭では、サケの切り身を使い、フライパンやホイル焼きで調理され親しまれている「チャンチャン焼き」。今回は料理研究家の東海林明子さんに北海道の郷土料理「チャンチャン焼き」 について伺います。
